Articoke Schnitzel

ingredients

 
  • 6 medium artichokes
  • 2 cups breadcrumbs (dry or fresh)
  • 3 cloves garlic
  • 1 cup parmesen cheese
  • 1/4 bunch chopped parsley (italian green leaf)
  • 2-3 eggs beaten
  • salt & pepper to taste
  • 1 lemon cut into pieces

method

  1. clean & cut the artichokes back to the tender part
  2. cut artichoke in 1/2
  3. put in bowl with water and lemon pieces so the artichoke doens't go black
  4. meanwhile have a pot with water and bring to the boil
  5. when water boiling add salt to taste
  6. cook the artichoke until tender
  7. strain the artichoke and let cool on a tea towel
  8. place breadcrumbs, parmesen & chopped parsely in a boil
  9. then cover the artichoke pieces in beaten egg
  10. then coat the artichoke pieces in breadcrumb mixture
  11. shallow fry in olive oil
